Fresh and preserved Truffles
The truffle was believed by the ancients to have divine origins, indeed it was held to grow wherever jupiter hurled his thunderbolts. For centuries truffles have been imbued with a magical mysterious aura, making them somewhat enigmatic. Highly prized by gourmets, the truffle is generally deemed to be a noble food, but let us not forget that it is a fungus growing underground, a gift of nature’s bounty nestling among roots of oak or poplar ; which is brought to light to enchant our palates with its unmistakable aroma. The refined but earthy flavour of the truffle ranges from delicate to more robust, dependine on the choice between the black or the white one.
